Chicken Teriyaki Bowls

Ingredients

  • 1 lb. chicken breast

  • 3/4 cup rice

  • 1 cup shopped carrots

  • 2 cups chopped broccoli

  • Teriyaki sauce (I use Taste Flavor Co. Sesame Ginger Teriyaki)

Instructions

  1. Cook rice according to it’s package.

  2. Chop carrots and broccoli into bit size pieces

  3. Heat a pan with butter or oil and add chopped veggies.

  4. Add a 1/4 cup water to the pan and cover, allowing them to steam.

  5. Set timer for 5 minutes to check veggies

  6. Prepare the chicken by trimming it and cutting into bit size pieces.

  7. Veggies are done when a knife can go through a piece of carrot easily, but still has structure and is not mushy.

  8. Drizzle teryaki sauce over chicken and then add to a hot pan. Cook for about 10 minutes, stirring chicken every 2 minutes.

  9. Add cooked rice to a bowl, veggies, and chicken. Drizzle with teriyaki sauce and top with avocado.
